Vino cotto (cooked wine) was sort of an urban myth from my childhood.   The stuff that culinary legends are made of.  My grandparents were born in Italy and even though they sought economic relief from their small town of Francavilla, Calabria;  every day life necessitated that they utilize and not waste any food products.    However, wine was always plentiful as they grew their own grapes and made their own wine.  One of the by-products of that wine was called vino cotto which was made by boiling down the ‘must’ of the grapes culminating in a sweet, sticky syrup. Must (from the Latin vinum mustum, “young wine”) is freshly pressed fruit juice (usually grape juice) that contains the skins, seeds, and stems of the fruit.  We called it the dregs, but as with so many things, that were once considered sustenance only for peasants, they have now been elevated to gourmet status.

Such is the case with vino cotto.

Today vino cotto is quite expensive and difficult to obtain, so I have decided to try my hand at making it…….

 I was fortunate that my friend Ann ‘gifted’ me this small bottle of Vino Cotto from her recent trip to Italy

This is what I did.

 Take 3 cups of red wine.

Bring to boil and then reduce to low taking care not to burn the wine.

When wine becomes syrupy, take it off the flame and add 3 tablespoons honey.

My bottled vino cotto.

 Store in pantry.

Vino cotto is great used in place of balsamic vinegar to drizzle on vegetables or over grilled meats.  Can also be used over a wedge of pecorino cheese.  When we were kids, my grandmother would  gather snow and trickle the sweet syrupy garnet mixture on top.  (The original snow cone.)  They also made a cookie that can still be found in Calabria called mostacciolo, which as far as we could remember had only two ingredients, (vin cotto and flour) and became hard enough to break your teeth on.

This version will not replace the natural sticky sweetness of the cooked must, but as it is not easy to procur the necessary wine grapes, this makes a great substitute!  Provatelo (try it).
